Diancie bothers me because it shouldn't really be in the rock type category, even though it also should be. I feel like it should have been steel/fairy to match the qualities of a diamond just a liiiittle bit better. Dialga gets it, Mega Steelix remains steel and hardens into diamond-like structures. Don't get me wrong I fully understand the reasons, but it really feels like diamonds needed their own type almost.

Nah, it's consistent. Nihilego is a Rock type, being a glassy, mineral-esque thing. Dialga has actual Steel on its body IIRC, even though it has a diamond motif.

Diancie is basically a geode. It's not made of iron or any sort of earthen ore. Rock type makes sense.
