Attack: 80-100, estimate high if you count throwing ability, since humans are good at that
Defense: 70-80
Sp. Atk: 115-130, but good luck being able to use that if you're not a talented psychic.
Sp. Def: 80-120 depending on how much you factor willpower or wisdom
Speed: 70-85 depending on if you factor in "muh persistence hunting"
Type:
Normal by default, Fighting if martial, Psychic if they have the talent, or Dark if they are brutal or sneaky.
Ability:
Technician, because of human smarts
Pickup because humans are resourceful.
Schooling because humans are formidable and tricky in numbers.
Wielding: Boosts Attack and Critical Hit when holding an item. Item effects, including Fling, are boosted.
First-Aid: Can use regular healing items that are held as if they were berries.
Utility: Empty move slot becomes filled with a move that depends on the item.
Various Moves:
Elemental Punches if dedicated marital artist.
All stat boosting TMs.
All non-signature Psychic moves except Cosmic Power, Gravity, Power Trick, Teleport, and Room moves.
All non-signature Fighting moves.

Really though, humans are mostly successful thanks to being smarter than most Pokemon and having better charisma than the ones that are.
