I'm about to play through Platinum again but only with 3 Pokemon cause I get really underleveled when I use six. Granted 2 of the the 3 are infernape and staraptor what should my third mon be?

Not OP but Staraptor can fly and Internape can Strength and Rock smash so the 3rd should be water type for Surf etc and you're set

3 is going to leave you overleveled and will make the game WAY easier, just run a team of 4 or 5.
3rd mon should be Gastrodon because its only weakness is fire which is already covered by infernape and staraptor, also immune to electric (Good for switching in to if its staraptor vs electric type). It can deal with ground and can some-what deal with water.

I would say a water type you haven't used often or perhaps never used

(maybe something like Shellder. Only problem is, you don't get Shellder until you can get a Super Rod) ...soooo maybe Wooper/Quagsire?
