When castform attacks, it sets weather and changes form to match the type of the attack. The weather effect and the form change happen before the attack actaually hits, so castform always gets stab and benefits from weather, just like protean.

Water move = sets rain and changes to water form.
Fire move = sets sun and changes to fire form
Ice move = sets hail and changes to ice form.
