The translator who's been doing all the Pokespe stuff wrote in a post that he's buying all the XY chapters that haven't been put into volumes and will translate those as well.
They're side chapters that are canon, but didn't make it to volume format for some reason.
Stuff like her getting an Eevee, and Korrina and Gurkinn vs Essentia resulting in the destruction of the Tower of Mastery are side chapters.
So if you wanted to know why she had a random Sylveon one chapter, it's because it was from a side chapter that didn't appear in the volumes.
