By giving him every starter from his generation, he represents players no matter what starter they ended up picking.

There's no way they'd stick to one canon starter for any of the protags game-wise, as that would invalidate players who didn't choose those starters. I mean maybe in manga or anime, sure they would for the sake of narrative, but certainly not when they don't actually need to.
But, if you do want me to go full autism and pick which starters I think would fit each protag best, I'll indulge you.

Lucas/Dawn: Torterra
Hilbert/Hilda: Samurott

But on the flip side, you don't really encounter in-game trainers outside of battle tower type things with legendary mons (aside from N), so let's just assume that that's their team without the dragons on them.
