Why is Vanilluxe the go-to Pokémon for people who argue that Generation V's designs were bad?

It's a bad and lazy design, jjust like many other from that gen, like garbodor, klinklang, musharna, the alien pokemon whose names I will never remember (or bother to learn), the manbearpig starter, the angry beavers, the lazy aipom elemental trio carbon copies, the mandatory pika clone, generic fish mons, the horrid snowflake thing, not to mention that I waited since gen I for a water/ghost like a leviathan or kraken pokemon on a haunted ship dungeon and instead we got jellicent, le pokeballshrooms, le krabby/paras hybrids, those horrid blue/red fighters which are less-interesting versions of hitmonchan/hitmonleee, le mandatory mew clone (victini), le zubat clone, I agree OP, with so many horrid designs, I still don't get why they always pick vanilluxe and garbodor

Since Vanillish already looks kinda dumb, Vanilluxe ends up being way less than the sum of its parts.

Yeah it's cute and its well-drawn, but ultimately it's an ice cream sundae with a face on it (in b4 someone mentions about how its actually a living icicle that only looks like ice cream, as if that's somehow relevant to the point). How is the design more creative than something I might get out of some generic stuffed animal company or some generic stickers a kid can get after a dentist appointment?

Yes, there's designs you can say that for for every gen probably. Gen 5 happened to have more of them.

Garbodor is ugly. It's intentionally ugly, so there's nothing objectively wrong with the design, but it's perfectly fine to dislike ugly Pokemon. Don't fall into the "Unova dindu nuffin" meme that reddit ran into the ground.
