"mons" isn't an official franchise term. "Tapus" is a nickname for the four guardian deities of Alola, so those are fine.

This happens mostly due to foreign speakers of English, if I had to guess. Some languages simply do not support a word's plural form being identical to its singular form, so a non-native speaker may not have yet caught onto English supporting such.
