It's predominantly Normal. And the main damaging moves that you'd want all the obvious Sound-PKMN candidates to get STAB on (Hyper Voice, Boomburst) are as well.
In the other types you have a handful that can retain their flavor-types (Grasswhistle, Metal Sound, Snarl, Bug Buzz) for the same reason that Thunderpunch is Electric and not Fighting.
And the rest are signature moves that would either stay that type to fit their PKMN (Sparkling Aria->Water starter) or change because the user gains the Sound type with this retcon anyway (Chatot, Chatter->Sound).
The only issue is what will happen to Jangmo-o line, because you have to know that before changing Clanging Scales to a Sound move. But seeing how the whole evolutionary line merely learns a single Fighting move, Sky Uppercut, and even THAT being a relearn move, they'd very much enjoy being turned into Dragon/Sound.

that's about all of the Normal type lines that would change their Normal type into Sound. Note that Normal is currently the most numerous type only behind Water, which means there'd still be a shitload of Normal PKMN left after the retcon.
