The organiser then needs to input the scores from the match slips, print a preliminary match report (i.e, a list of players with their scores), wait five minutes to see if any players complain that their scores have been incorrectly reported, then print off the next round's matchups and match slips.
The main reason for delays these days is that most best-of-3 games are completed in under 30 minutes, but some players with stall-y teams will go up to about an hour. Some tournaments have massive administration failures (2014 UK Nationals literally ran out of printer paper and had to get someone to go buy some more, for instance) but they have generally gotten good enough to not suffer those any more, thankfully.
