Actually, it was though you're being a bit facetious about the origins of Incineroar's design. In Japan, Tigers are very associated with wrestling thanks to the Tiger Mask franchise and the influence of Lucha-style masked wrestling personae in their ProWres leagues, even going so far as to include Dark typing to denote its Heel status. It's understandable why a Western audience wouldn't get the cultural appeal of the design; it's the same thing that happened to Samurott given the Samurai progression theme its line was based around.

I'm aware of Incineroar's origin. Perhaps I should've put 'Professional Wrestling' instead of WWE, but it's all really the same. That said, a Pokemon's theme and origin doesn't prevent the design from being bad. Same can be said for Midnight Lycanroc. I can appreciate what it was going for, but the design just fell short.

I'm gonna have to disagree with you there, MoonRoc is a damn solid design, incorporating motifs of cartoon wolves with an inherent aura of brashness carried in its stance, animations, and moves. It strikes this nice little midpoint between anthropomorphic and animal with the wild hair ending in a spike and the jacketlike back fur giving it a sort of greaser/scrapper look.

Maybe it's just that I'm not a fan of the whole, goofy-cartoon element that both of them carry. Like it's trying too hard to catch that Yokai-Watch vibe, but with a Pokemon flair. Pokemon has its own brand of goofy; it didn't need to borrow from some over-the-top series that's based in goofiness.

Gen VII seems to embrace some of the sillier aspects of a series about kids and their monsters going around having adventures and plays that up in the standard designs. It's part of why the legendaries/Ultra Beasts feel so alien; they were given a sort of extreme, almost utilitarian vibe to their designs that it makes them imposing by proxy.

Ultra Beasts are another point entirely. They deviate from standard Pokemon because GF wanted them to feel precisely what they were: alien. And, if Gen VII wanted to embrace the silliness, then it wouldn't have been difficult to borrow from Pokemon's own style. Lickitung, Tympole, the Vanilite line and plenty of other Pokemon that're meant to be silly in their own way.
