Kanto Grimer and Muk are a byproduct of industrial pollution and and eat said pollution. They were made accidentally by the moon gods, and just sorta lived off of the pollution they're made of.

Alolan Grimer and Muk are Kanto Grimer and Muk that have to eat all forms of garbage, litter, pollution, and refuse to clean up Alola, which sounds like a much worse combination than just factory run off. Maybe that's where the evily, darkness is from.

They do this IRL, you take venom and dehydrate it. This in turn causes the venom constituents to crystallize.
