I used a Fearow for mine, it can learn false swipe and even if you don't have a Keen Eye one, it still can get Aerial Ace to avoid sand attacks.

Do you guys keep track of how many SR you've done altogether and not just for particular shiny hunts?
How many SR have you gone through since you became a shiny hunter?
I looked up on YouTube that SR a damn lot can corrupt your save/file so that shit has me worried....

This is 100% false. Don't believe this, anon. SRing isn't a glitch or anything like that. It's a feature meant to be used.

I've done SRs for Lugia, Cobalion, Virizion, Zekrom, and Type Null. No save corruption in any of them. Never kept track, but my most encounters for a shiny was Virizion, it took a few days to get.

iirc data miners confirmed that all mons in the trial area (and the totem mon in particular) are set to never be shiny. When the trial is over, you can find a shiny though.
