When I have a shitmon, I dunno, Pidgey, and then i invest a golden bottle cap into its IV, do those carry over when I deposit in, say, X and Y? Also which IV are used when I breed with it, the shitty genes from before or the master race ones?

You can't transfer Pokémon from Gen 7 to Gen 6.

1) you can't send it back to xy
2) cap doesn't change ivs it just sets a flag saying treat this pokemon as if it has max ivs
but for purposes of breeding it uses what it naturally had. not sure how it affects hidden power

You can't deposit in XY. It's a one-way street to Gen VII.

But it should carry forth to Gen VIII.

The shit ivs are used, and you can’t get a gen 7 mon to a gen 6 game.

like every other generation of pokemon games, you cannot go backwards. pokemon from SM cannot be placed into an XY game.

You could trade between gen 1 and 2 but can't trade between gen 6 and 7
Modern GF can't compete.

Pokemon can't be transferred from SM to previous generations.

With that being said, pokemon that are traded between copies of sun and moon retain their hyper trained stat changes

I'd assume it's like this, but does anyone know what happens to the data for the Hoenn Champion Ribbon when traded to XY from ORAS? It's still there, because when traded back to ORAS it's on the Pokemon, but in XY you can't see that (or any other ORAS-introduced ribbon) in XY.
