I've only had 4 random shines. Caught 3.
Unown W in SS, Grubbin and Peliper in SM, and a Chingling in Pokemon Prism (which was in the forest where you control your Pokemon and don't have your bag)

Wrumple, Beedrill, Wrumple, Budew, Chikorita and Wrumple.

All females except chikorita who also ruined the poison only (all the three wrumples evolved into dustox) shiny record.

Probably a lot more that I've forgotten. Noibat was my favourite. Never should have evolved it. Shiny Noivern is an ugly piece of shit

Physical cartridge shinies are Lombre in Sapphire, Woobat in Black. I wont count it since I was technically kind of chain fishing, but in X I found a shiny Barboch while grinding a Skorupi. ROM shinies are a Cheerly in Clover, a Hoothoot in Sienna, and a Paras in Nameless Firered.

Despite many generations of games played, I have yet to ever encounter a wild shiny that wasn't a forced encounter (e.g. Gyarados).

However, I did battle a trainer with a shiny Pokemon in Battle Frontier in Emerald.

I failed a magcargo in platinum because that dude with the lucario that you team up with killed it.
But as for the ones I didnt fail, first was drowzee in HG, then wingull in OR, and caterpie, magnemite and granbull in moon.

I shiny hunt a lot, but some of the completely random ones while not hunting have been:
- Wooper in Silver
- Roselia and Lillipup in White 2
- Staryu, Golbat, Gumshoos, and Caterpie in Sun & Moon

Only ever found two without explicitly looking for them. First was a seviper in ruby that I promptly killed with a crit and second was a Durant I found while fucking around trying to catch a normal one in White
