Played the Sun/Moon demo however. Thought it was mediocre, easy, and held your hand too much. Is USUM worth it? Is the postgame good? Does it get rid of the insulting amount of handholding?

This. This is the exact thing i've been telling my friends, if you haven't played SM then definitely go for it, if you don't care about the story and only being up to date with the new mons then that's up to you.
