The problem with no outlines is that the models need to be shaded more.
The problem with outlines is that designs start to look pixelated at a distance.
Basically a lose/lose situation unless we use the Pokedex Pro/Go modifations since those are all basically the same models.

It's needed because the outlines don't look nice on upsampled resolution. It isn't like a vector-stroke in Photoshop.

It also comes with the benefit of improved performance on the emulator.

No outlines looks great with these models, it just needs to have decent lighting. Without it, everything looks flat and the shapes are lost. Here's a render I just did.

I don't like the outliines, but modding SM to not have them when the game was designed with them in-mind makes it look even worse in some cases. Hopefully the Switch game will not have outlines and they design the rest of the game around that.
