Jesus H. Necrozma are these canonically the biggest Pokemon? Why the fuck are they so big? Are there any other Pokemon in the games or otherwise that have been seen to grow far larger than normal (besides totems)?

There was a giant Dragonite in the anime, and an episode with an island of giant Pokemon, like Tentacruel. But other than that, no, Xurkitree is the largest Pokemon seen in the games.

Xurkitree, Celesteela and Lickilicky are currently the largest Pokemon
Xurkitree is obvious, you see a steela at least twice as big as the one you fight, and lickilicky has an 80 foot tongue

I don't think Nintendo is as worried about a rigid, consistent chronology as you are. A non-canon Ash Ketchum sent you a non-canon Ash Ketchum's Greninja that functions the way it should based on game mechanics

They probably need lots of electricity and a huge amount of time to grow that large. Which they do because they have no natural predators.

And once they do, they probably lose the ability to move, due to the sheer weight of their bodies, forcing them to "take roots" in the same place, so they are like "wire trees". But this is headcanon.

No, Ash Greninja was made because the anime staff wanted Mega Greninja for story purposes, but Gamefreak wasn't willing to make one. Ash-Greninja was the compromise. The interview you're referring to outright states that it only got thrown in as a demo bonus because they know that kids like to go through the games with Ash's team.
