Just started Ultra Sun and my starter's ivs are 31 in 2 slots, 28+ in 2 slots and a 1 in speed. Will lack of speed really hurt? Should I reset or Keep and breed?

all Pokemon can be given artificial perfect ivs with bottlecaps so it don't matter. you certainly don't need perfect ivs for story mode

You'll be able to breed for 5-6iv pokemon a lot faster than you'll be able to reset for a natural one. A few rounds with a good ditto (which you find five naturally, each with set ivs) will easily get you what you need. Just play the game, worry about ivs later.

Catch every member of the ditto five though.
