gyms at least had a LITTLE bit of a puzzle element to them, i remember trying to do wallace's gym as a kid and feeling pretty accomplished once i learned the end pattern.
trials are just beat 3 single pokemon and a boss

Along with the new region, you can visit the previous regions and each region has a fully fleshed out main storyline. Maybe consolidate the end by becoming a real world champion in a grand tournament after becoming champion in every other region.

I think the only feasible way of doing this would be to revisit Red and the main character. As he progresses he's ageing between regions. It'll tie in how we see him again albeit older in S/M.
