mega stones allow for mega evolution that increases the pokemon's power a great deal, but you can only use one per battle. z-moves are once per battle nukes. the game will tell you what each z-move does. alolan forms are old pokemons with new typings.
don't worry about it too much i'd say. everything else i think you'll just learn naturally as you progress.
>Why should I pick one over the other?mostly comes down to preference, the story is largely the same either way. us and um have different characters (dulse and zossie in us, phyco and soliera in um). as usual there are also version-exclusive pokemon, but the gts and injecting makes this mostly irrelevant.
sm has almost no differences between the 2 if i recall correctly
>which starter do you like?popplio is the best choice in my opinion, the final evo has a great typing. litten also served me well, but you go a long time with just fire fang as stab, though that may have changed with the move tutors.
rowlet carried me through the first half of sm but its usefulness absolutely tanked as the game went on. damn near everything has some kind of advantage to it, and it's frail but not speedy or strong enough to justify that.
tl;dr my recommendation is to just play usum or maybe learn a little about the story of sm, then play usum. version is your preference, popplio is the most advantageous starter imo
