It would play like regular Pokemon game, you would play Link or Linkle, with your rivals being bookworm girl Zelda and overambitious and violent Ganon. You get your starter from Professor Deku (named after tree, see?) Starters would be based on triforce aspects, Grass would be Courage, Water - Wisdom and Fire - Power. It would be perfect if you also had a Rotomdex constantly asking you to listen.
You travel through the region of Hyrule visiting familiar places, like Hyrule Town, Lake Hylia, Death Moutain, Kakariko Village, but seemingly more technologically advanced, mirroring Pokemon technology. You meet regular Zelda enemies like Oktoroks, Peahats, Like Likes, etc., but instead of killing them, you can catch them and raise like Pokemon. Races other than human, like Goron and Zora all seem to have devolved into catchable animal-like creatures too. God-like creatures like Windfish would act as legendaries. Gym leaders would be descendants/reincarnations of Zelda characters, e.g. Tingle as Fairy gym leader, Darunia for Rock, Lulu for Water, etc.
The big reveal of the game would be that sometime in the past a scientist from Pokemon World discovered a way of interdimensinal travel and ended up in Hyrule, where he shared advanced technology with Hyruleans (alternatively, it could be Hyrulean scientist ending up in Pokemon world)
The heartwarming point would be that Hyruleans, by gaining a device to catch them, learnt that they could live alongside monsters instead of killing them, like inhabitants of Pokemon world do.
