Stupid question, but if you enter an Ultra Wormhole and encounter a legendary, can you leave the WH and come back to the legendary later?

Yes, they can be re-encountered infinitely until they're caught. You can leave, kill them, anything aside from catching them.

While we're at it, if you find a shiny and saved before fighting it you can reset for nature and IV and it'll stay shiny.
I always take 5 abras with Syncronize and useful natures to ultra space with me.

Just adding to this, it only applies to normal-ass mons. Legends and ubs will not be shiny if you reset over them.
