Especially since ground has been amazing since Gen V and londorus so you're talking about the last several years. They're not good Pokémon solely because they are grass types in the current meta - they are good grass types. Same as there are a bunch of trash tier Mons for all the other types and the ones we see the majority of are the good ones.
Imo a type is more than just weaknesses and SE as certain types typically have access to different utility moves to bolster them. Grass has powder and spore moves along with a lot of self sustain to counter a higher number than average weaknesses. Fire has a number of predominantly physical weaknesses but has burn status to mitigate as well as being good against the specially oriented types that water (it's only special weakness originally) can't beat (grass, ice). Electric types are generally faster, have status attached to their moves that helps maintain their speed advantage, and a single weakness balanced by few resistances and an offensive immunity. Etc etc
If it was purely down to being a grass type with a gimmick, then there are a ton of Pokémon who fit the bill, but we don't see them because they are either outclassed or flat out bad.
tl;dr - writing off grass types with application in the current meta as gimmicks because they have access to decent base stats, useful abilities or utility moves traditionally associated with the type is dismissive and dumb.
