So I only just found out today(not a big pokefan) that there's only 7 generations of pokemon.
3 for Gameboys, 2 for DS(plus BW2), and 2 for 3ds(plus USUM)

That' actually pretty little, tbqh, I legit thought there would be like 15 or something with all these spinoffs and rereleases and nonsense, now it's sorta accessible to me.

Also was this game even a thing? Like, at all?

GF rushes games enough as it is.
But as for your question I don't believe that Conquest was successful enough to warrent any more sequels. If you want a game to get into, HeartGold/SoulSilver are conidered to be the best due to the sheer amount of content. Don't get the new games though, unless you like railroaded RPGs with a million unskippable cutscenes.

I got into BW2, liked how in the postgame you have a ton of legendaries to collect and minigames to do, and I read up and apparently it's the first game with reusable TMs, which is cool.

Also I was thinking of just diving into USUM, it's the definitive version of a really big game.

If you haven't played SM then USUM is okay as long as you don't mind the linearity and the cutscene thing, because there are a lot of challenging moments in the game, especially near the end.
The post-game also gives you a cool mini-game where you ride solgaleo/lunala (not the ones you catch unfortunately) through wormholes in space, which take you to an otherwise empty room where you have a chance of finding a lone legendary. There's a sidequest where you have to catch multiple Ultra Beasts in the post-game, too.
However, there's not a whole lot to do outside of that. There's a post-game campaign where you fight villains from the previous games but it doesn't last very long. Alola is NOT big, and there isn't much content that can hold up to the likes of Pokestar Studios or Black Tower. Try to imagine Pokemon Black and that's kind of comparable to Alola, albeit with more challenge in the main campaign.
If you'd prefer to try USUM for yourself rather than take the word of an anon that it isn't great then go for it, otherwise I'd recomend HGSS even more based on what you've praised about post-game.
