Neat, I thought both the user and opponent needed an item, but it looks like it's always works if either is holding an item.

The only way Trick can fail is if the opponent or you are holding a Mega Stone or a Z Crystal. Everything else is fair game unless there's an ability I'm unaware of that prevents the pokemon from losing its item.

There are a few other exceptions. Off the top of my head, Griseous orb when it's on Giratina can't be tricked, and neither can any of the plates if they're attached to Arceus. Basically anything that would force a forme or type change I think.
