Flying in itself is not an element like Fire or Water. If it was an element it would be called Wind or Air.
Flying type just represents that this is a pokemon that is flying, probably with wings. And, of course, you need something to attach the wings to.

The exception is Tornadus, who literally is air.

That looks pretty good already, but because nupokemon can't just be animals just put a big ol dart on it's head that doubles as it evolves, and trees will be the dart boards haha

Toucannon should have been a hornbill. Make it Steel/Flying, a special attacker, make Beak Blast special, and give it a literal cannon sticking out of its beak. Harkens back to old Pokémon design while still being interesting and incorporating the intended design philosophies while adding some more interesting stuff than literally my mom's toucan.
