I'd love to design some alternate evolutions for mons like Crabrawler, Sliggoo, and Flaafy where they take the design in a different direction. Imagine Crabrawler becoming a speedy championship boxer with a coconut helmet, or Sliggoo turning into a more regal sea slug with a French royalty theme, or Flaafy's wool billowing out into a big dark storm cloud.
