Like how Monster Hunter jumped from its subpar graphics to full fledged HD and more expansive realistic maps, how long will it be until Pokémon goes down the same route? Will it be on the Switch or the next system to come around? OR will it stay cartoony and cell shaded forever?

It should be in the upcoming games. Simply doing XY/SM but in HD isn't enough of a draw. That said, Gamefreak is a lazy as fuck developer who refuses to increase their staff sizes, so expect more of the same, but shinier.

Pokken is absolutely as far as realistic Pokemon should go
And even then, Pokken has slight issues with Pokemon due to their eyes (see pic related and holy uncanny valley christ)

Also keep in mind that not only is Pokemon a kid's series at its core, but also Japan favors more cartoony and colorful mascots over realistic graphics (it's a real culture known as "kawaii culture", no i'm not making that up). If you want realistic Pokemon, either play Pokken or move on to something similar like Monster Hunter World.

I personally like the idea of realistic Pokemon, but only to the level of Pokken because there's nothing inherently wrong with keeping things a little bit cartoony.

Because I fucked up twice and typed Ga-Old instead of Ga-Ole in the first post and didn't notice until I posted the tripcode-attached comment.

But they can do nice things and still look cartoony.
For example, making you able to see wild Pokemon interacting with their environment, with other wild Pokemon and with the trainer would be a nice addition: making them run when they see you, or if they are strong enough (think of an Ursaring with some cubs), to engage you.
It would give the world some depth and would make some stories tell by themselves just by interacting with it.
