Considering fungi are organisms that strive off of others, they would likely be associated with the dark type or occasionally the fairy type.
Most moves would be in similar concept to moves like leech seed or giga drain. Ones that take away from the enemy. Poisons are also included. But, that's just a generic view, as there are SO many different types of fungi. They would play in the middle ground, leaning more towards a support type depending on the species.
Leaving the type to "parasite" will allow nintendo to make more bug-like pokemon without it having to directly be a bug and decay type would allow more pokemon based on the natural decay of things. This would prooobably lead to Pokemon based on Tsukumogami.
When it comes to the town, gym, habitat... It would likely all be within a forest with high humidity. Thus, allowing most all fungi to strive. They would hate dry climates most, along with overly bright locations. This is why they would be seen more mystical or creepy, providing a crossover possibility with dark and fairy types. Along with many others, depending on the base fungi species being used as reference. I could see a town full of mostly older people and nature maniacs.
This would also be a good chance for nintendo to educate people on fungi, which i feel is a subject that could use more spotlight in general. Likely being done with an aim to properly state if a certain type is poisonous, so if they see the fungi it is based on, they would likely be more inclined to remember it was poisonous.
