Typings aren't literal. If it were the case, only 23 out of all fire types (including forms) MIGHT be fire types since not all fire types are on fire. And only 2 out of all water types might be considered Water types since only 2 have a body made out of water.

All Fire types use fire though right? Not just in a "can learn Flamethrower/Fire Blast" sense but in a "Pokedex entry says so" sense. It still doesn't follow that Ultra Neccy SHOULD be Fire type though, since it doesn't explicitly use fire (TMs/move tutors don't count otherwise every bird Pokemon would be Fire type) as a fundamental part of its being. You're right that typings aren't literal, but that also means that you can get away with liberties such as Pokemon using heat without shoehorning them into a fire type.
If you ask me though, if Neccy needed a type change then it should be part Rock type.

Psychic doesn't suit them at all. Fairy does more. If the Tapu can be Fairy and not look similar to Sylveon then the Cosmog line can too.

Solgaleo and Lunala have a third eye theme when they use their signature moves or travel through wormholes.
Necrozma is basically a floating brain and the rest of its body is just armor it moves telepathically.
Psychic fits way better than Fairy even ignoring the cosmic aspect.

Also it's not a floating brain it's a floating rock. I don't even know if it has a brain, but it is from space or somewhere of the like so I guess it doesn't matter. Maybe if Fairy was called the "Mystic" type or something like that, it would suit it more
