Though I do get what you're saying. However Ice and Fire are somewhat rare types for whatever reason so I don't really mind the whole 'red animal on fire' thing.

looks like a pile of broken ice shards with a sad face, only knows a few filler moves like growl, powder snow and cut, doesn't learn anything else.

evolves into a restored Ice Mirror with legs with an image of a happy, mischievous cutemon on its body which serves as its true self. A slow, defensive type with mostly support, recovery and status moves. abilities are: Magic Bounce; a new ability that allows it to take no damage from light based moves and reflects it right back at its opponent. HA is prankster.

Has an attack that puts itself to sleep the first turn then inflicts frozen status on all pokemon on the field for 2 turns. The sleep status works as normal, it does not have a set duration like rest

I respectfully disagree. Firstly, because a lynx is a cat, not a dog--although to be fair, those designs seem to be influenced by both feline and canine qualities. Also, dog and cat Pokemon will probably always be in every generation, and I personally will never get tired of them.

Ice type Viking humanoid kinda like medicham but with little horns and an armored head to resemble a Viking helmet. Evolves into Ice/Electric humanoid vaguely resembling Thor, and its fingers on one hand all fused together into a tough callous-like material that it can use as a hammer. The callous-like material is a powerful electric conductor and contains an organ similar to electric eels for zapping the piss out of stuff.

they get a respective Ability of their Gender

a bug line based n those insects which freeze solid over the winter and thaw in spring perfectly fine. first stage bug, second stage pure ice and with an ability or attack that keeps it frozen but mostly invulnerable, third stage bug/ice?
mons with a christmassy theme? an ice/fairy based on tree toppers, an ice/dark krampus, ice/ghost line r trio based on ghosts of christmas past/present/future
ice/fighting based on ice skating, with blade legs
ice/flying based on carved swan centrepieces
an ice/poison based on the bleeding iceberg phenomenon, and maybe on the idea of dormant viruses being released from melting ice
ice/ghost giant drifting iceberg in the form of a whale/ghost ship, which tries to sink boats to add their treasure to its mass
tonnes of arctic/tundra/mountain animals you could do. snowy owls whose wings shed a constant blizzard when they fly, obscuring their hunting? cute arctic fox whose face and muzzle has a big red heart over it, but the red is based on the look foxes get after they have eaten? ice/psychic shaman markhor? ice/water or ice/psychic japanese macaques which are immune to scald?

Tough Claws doesn't really help much because Icicle Crash and Stone edge aren't contact moves, though. I mean, I suppose you could do Head Smash and Ice Punch but those aren't exactly optimal or a variety of reasons. I wish there were more ice moves.

Just realized why Ice is such an uncommon type: there's fuck all that lives in the polar regions. Organisms live and breed longer, slowing down evolution and reducing biodiversity, so there's not as many unique species.

Water/Ice
Abilities: Comatose (pun), Thick Fat (lives in near-freezing temperatures), Hustle (many sleeper sharks are blind from parasites eating their eyes)
Stats: 139/90/80/62/76/23
Notable moves: Gets the elemental fangs, Curse, Gunk Shot (sleeper shark meat is poisonous until it's fermented), and Recover.
