I was softreseting a necrozma in UM naïve nature, it have 31 ivs in all the ones I need except defence (it has 30-29)... do I keep it or I keep searching?

Use hyper training for IVs. IVs only matter for Hidden Power now, and a handful of other things like getting an Attack-boosting Stakataka.

Yes it will. And even if it wasn't, the stat changes would carry forward. Pokemon transferred from Gen 3 still carry the stats increased with berries, like Beauty and such, even in games without those stats. IVs are even more important, no way would they not have a system to remember those.
