There's almost always a shitmon bird, a shitmon rat, a shitmon housepet, and still more shitmons scattered throughout the dex.
There are good normal-types, but the typing is basically an indicator that GF didnt give a fuck and any good ones are total accidents that GF forgot to abort.

I usually run 3 Normal types in my team: Chansey, Tauros, and Snorlax (together with Exeggutor, Rhydon, and Starmie)

Because they're lame. Not the strange ones like Smeargle or the porygon line, but everything else:
-common rodents and birds
-cattle
-girly pets
-my mom's dog
-a thumbsucking baby
Dual normals are really saving the type concept wise.

I like a lot of Normal types with personal favorites being Komala, Drampa and Boufallant. However the typing itself just doesn't really have anything going for it outside of getting STAB on stuff like Explosion or Hyper Voice

No type advantage, being resisted by Rock and Steel and being weak to a common offensive Type just leaves Normal as a very subpar thing to be

I love Normal types. Some of my favourite Pokémon are Snorlax, Stoutland, Blissey, Porygon line, Oranguru, Bewear, Ursaring, Helioptile, Audino, Linoone, Wigglytuff, Tauros. I really like it desu.

They are the flavorless type and are pretty common after Water. With that said, I like dual-type Normal-types that are rare type combinations such as Heliolisk and Pyroar.

But I do like how Normal-types, for their lack of specialty, only has one weakness (Fighting) and can learn moves from multiple other types as well. (Other types, such as Water and Ground, are more restrictive on the types of moves their Pokemon can learn.)

Design wise? A lot of them are brown, or tan, or some other boring color. Some of them do have good designs, but they lack the elemental flavor of the other types. Even their attacks are rather plain, and like Dragon they're only worth using with STAB.

because, first of all, they're like the designated non-type. normal type is pretty much equivalent to no type at all. also they're all pale shades of brown, black or pink, which are very boring-looking colors
a lot of them look like lazy cartoon versions of regular real world animals (toucannon, komala and herdier are some of the best examples)
and the worst thing is it's not SE against anything and NVE against rock type
if you're gonna play with normal types you might as well drop the 3ds and the games and go walk your dog and pretend it's a pokemon
