They were complicated maps with actual level design and tons of places to explore. You weren't simply running around a bunch of rooms fighting baddies, you were progressing through the level like you would in an action game. Enemies were all present on the map (the encounter starts when you run into them, like in all modern JRPGs) and you can ambush them from behind, or even sneak past them. You also had to solve a multitude of environmental puzzles to progress, and that made the world around you even more interactive than usual. Combine that with great music and viusal design, and you've got yourself the greatest dungeon crawling experience this genre ever saw.
And Pokemon games can do the same stuff without any problem, in my opinion. Imagine doing the usual evil organization dungeon, but this time you actually have to infiltrate the enemy fortress by searching for the optimal route, avoiding detection by enemy grunts (or fighting them on purpose to clear the way) and slowly progressing to your objective. Maybe some of your Pokemon can help you get past stuff you wouldn't normally be able to pass (like maybe a Rock type would break through the locked door or something). Or imagine a cave where you actually have to find the way out not by walking aimlessly around but actively exploring it, while constantly being stalked by Zubats and whatnot.
It can be done, and I think it should be done considering that the Switch is not just a small portable console anymore.
