Personally I'd of course want to travel across various regions, not necessarily to become "the very best or catch 'em all", but to grow as a person/trainer alongside my partners, and make friends along the way as I learn about different region/cultures, history, etc.
I would have a working trainer visa where I can work at the local Gym's, helping out the gym leader or helping out the local town with logistics.
Aside from work and self improvement/growth, I would take time to volunteer at a pokemon day care and/or Trainer Veteran center and talk with old-timer trainers, as they have amazing stories to share from their journeys
