Unlike with Smash Wii U and ORAS, Smash Switch and Pokémon Switch are in direct competition for the Switch's main holiday title. Mainly, the, "Our child wants a game for Christmas" audience.
And also unlike BotW, Splatoon 2, and Odyssey from last year, having Smash come out in Q3 would be a horrific business strategy where the anticipation for the game dies before the holidays. Meanwhile, if Pokémon was gonna take the Q3 spot this year like with XY, we would've known some stuff about it by now besides a, "we're making a core RPG", at E3.
While we're on the subject about the E3 statement, considering that Pokémon Switch development was pretty dry up until that point, it's very likely that development began more recently than you think it began. Therefore, more time needed to work on the game.
TL;DR it just don't add up
