Because Pokemon evolution is supposed to be a natural, albeit magical, process. You don't need that kind of song and dance to show it morphing into its next stage.
If my limited understanding of Digimon is correct, digivolution is a much bigger deal in digimon lore.

In series like Xros Wars and early Tamers but not really in the other series. Pretty much anyone can digivolve on a whim.

In the original we see it a lot most notably with Leomon and Etemon who later became SaberLeomon and MetalEtemon.
02 was the same universe but there was the whole control spire thing.

Leomon was training pretty much constantly and got extra energy from the digivices and he has trouble with it because he doesn't have a destined child. Etemon absorbed power from the network after falling into that warp thing and came back stronger iirc. There's no on a whim about either case

Digievolution just doesn't make sense at all, since any Digimon can evolve to other Digimon without any correlation with it. Digimon evolution lines are a total mess and doesn't follow any logic.

This. I feel like about a third of any given Digimon episode in the early seasons was devoted to the same Digivolution sequences we’d already seen a dozen times.

I'm pretty sure that's only a video game thing. Most of the anime seasons sans Savers have strict evolutionary families, and even a number of Digimon that have never been in the anime have canon lines.
