Uniform, on-model animation may be gorgeous but it comes with a lot of sacrifice, and actually hurts the industry and animators as individuals because it's harder to leave an imprint of your own style when you have to strictly adhere to the sheet. One of the goals of works like Steven Universe and Konosuba is for the animators to be able to make themselves recognizable and be proud of their work.
It's also counterproductive because the point of animation is to move and convey emotion and action throught movement, not to make an illustration quality frame for something that won't be on screen not even a second. And if you have to make it so perfectly detailed and sticking to sheets there's little to no room for experimentation or smears. That's what comics and illustration are for.
