Because 'balance'. If you had no gimmick then you'd be something like Hypno or Ledian, which have absolutely nothing for it and shit stats all round.
I really like Minior still. Too bad it is so weak to priority.

Gimmickmoms have been a thing since gen one tho. If their number is increasing now is simply because gamefreak is slowly realising that they cannot keep shitting out the same clones of a type/stats gen after gen without it getting a bit old. Even shitmons need to have at least SOME kind of edge or special thing only they can do, else you end with collections of boring same-y shitmons (look at all the specially defensive pure psychic types), which is the worst possible outcome for these kind of mons.

I like gimick mons because they're memorable at atleast have a niche instead of rotting at the bottom of PU.

In addition to what's already been said, gimmick mon (especially those with forms) are used to artificially pad out the dex. See: Oricorio, Lycanroc, etc

Because there are over 800 of these fuckers now. I don't care how creative you are and I don't care if you cut that number in half to account for evolutions. No one is creative enough to come up with over 400 solid Pokemon that don't overlap each other

It is literally impossible to keep introducing 100 new pokemon every two years without some kind of "gimmick". The game would be stale as fuck without a major change like Fairy or Z-moves.

It makes them more memorable and more interesting for players to use.

By contrast, you have Pokemon like Fearow, Pidgeot, and Dodrio without gimmicks and end up feeling samey to use.

Yeah I agree with this

If Rockruff/Lycanroc came out in an earlier gen, I could see each evolution being a different Pokemon...don't know how they'd handle Dusk though. Maybe not introduce it at all? Same with Wishiwashi School form. Could definitely see that being an evolution if it was in gen 1 or something what with Dugtrio/Magneton and such

GF is running out of conventional stat spread/type/moveset combos and are reluctant to go off flavor for anything except weirdos like UBs. just wish they'd make them strong enough to impact OU.
