Is it true that JP Red/Green had different Pokédex entries to JP Blue? Which did we get, and is there anywhere to read the alternative?

It is the case in every generation.
Gold and SIlver don't have the same Dex entries, same case for Ruby and Saphire, ...

To read the alternate entries, maybe check Serebii. I know this website is despised here, but their online Pokédex is quite good.

Call me stupid but I'm not seeing any entries for Gen 1 or 2 on Pokemon pages like there are for other gens.

IIRC, bulba has them on the individual pokémon page listings w/ all their other 'dex entries.

Yes they did. They were reused for the remakes, so if you want to read them just look up the FRLG dex entries, it's the same thing.

According to Bulbapedia, we got Green's dex entries. So does this mean gen 1 had Red dex, Green dex and Yellow dex? The 3rd version (Blue) didn't get it's own?
