In gen 1 you can just use zapdos, articuno, starter, lapras you get for free, pidgeot and almost anything else and your set.
Gen 2 is argueably the easist gen
3 i dont remember
4 is not too easy but cyrus and cynthia are the only real challenges.
5. I dont remember well aside from BW2 hard mode which was a pokemon hardmode done right.
6 and 7. XP share make the games braindead, without its not a big deal since most trainers have 2-4 pokemon tops.
TLDR: Pokemon is easy, its designed to be easy so everybody can play it.
