I did this with someone for USUM and we're planning to do it for ORAS in the future, using predetermined teams we made. It's exciting. For goalposts, I like to do the first battle after the first Gym/trial, and then battle every ten levels after (so fight when your team is level 25 average, 35 average, so on). Gets you plenty of battles to show off your ever-growing team and strategies, but there's also enough change between fights that it doesn't get tedious.
There's a lot of neat things you can do with your rival to spice up the game, too. In USUM, for example, we hatched our Eevee eggs, gave themm nicknames based on what evolution we wanted it to evolve into, and then traded them with each other. They chose Vaporeon for me and I chose Leafeon for them. In general, I'd imagine you could, say, trade version exclusives or Pokémon in general, trade items, help each other evolve, or even temporarily trade Pokémon between goalposts. Y'know, get the other guy's for a little.
