Now that pokemonletsgo.com has been squatted by some random yet again, can we all agree that nintendo/GF are not enforcing these domains?

It's all fake people.

The enforcement could have been a de-registration though. For example, PokemonGold.org was shutdown by Nintendo awhile ago, but you can go register that today, as it was a deletion, not a transfer, ultimately. They still filed for trademark violation though.

The biggest tip-off that Nintendo don't care about the domains is the fact that only pokemonletsgopikachu.com and pokemonletsgoeevee.com are registered (Not by Nintendo). Normally when Nintendo register domains of an upcoming game they use every combination.

We should be seeing:

pokemon-letsgoeevee.com
pokemon-lets-go-eevee.com
pokemonletsgo-eevee.com
pokemon-letsgopikachu.com
pokemon-lets-go-pikachu.com
pokemonletsgo-pikachu.com
pokemonletsgopikachuletsgoeevee.com (Squatted by someone via GoDaddy 6 days after the leak)
pokemon-letsgopikachu-letsgoeevee.com

etc. etc. along with the different language versions registered by Nintendo Europe and so on.

That's what they did for S/M and US/UM.
