If you want to check the games out, safe starting points are probably Heart Gold/Soul Silver and Emerald. They're probably the most feature complete and cohesive Pokemon games, and have aged pretty well.
If you play those and decide you want to keep going, you should try Platinum or the Unova games (BW and BW2). They're pretty divisive comparitively, but all things considered they are pretty good, they just wouldn't be my recommendation for people's first entry in the series.
Only play the 3DS ones if you know you like the series. They're a lot more barebones in terms of things to do than the previous games, and have a lot of problems.
You might have noticed that I didn't mention any of the "Generation 1" games (FireRed//LeafGreen are the remakes, or the originals are Blue/Red/Yellow). This is because rumor has it that the next big Pokemon release is going to revisit Gen 1, so if you have a Switch you might as well wait to see if that's confirmed to be true.
Hope this helps!
