Honestly the closer I look at these the more I realize the graphics are actually very nice

I agree. PLG just from the trailer looks impressive and I can tell the 3DS was holding back the details. However, I don't expect an improvement in the models and textures when they release the Gen 8 main game. I expect it'll look exactly the same.

It's not even that kanto is a problem, more that the maps are basically the same as what we had in the original Red and Blue. Maybe we'll get stuff like an actual volcano on Cinnabar but I'm not expecting much.
