I don't remember anything interesting happening in the anime outside of a few random arcs in Kanto, Orange Islands, & Johto.

it's all filler. If you wanted to follow game-plot more closely there's the Adventures/Special manga for that which is much better anyway. The anime was only good when they branched off and did their own thing like with Tracy and Harrison.
