Dex entries have good references of how some pokemon are consumed and which ones, so probably those would be served the most in markets and restaurants
A lot of people in Alola seem to prefer fish or vegetarian diets, food of land pokemon is mentioned way less than these, but that's probably because Hawaii is also small islands with little space for cattle as far as I know.
People mention slowpoke and farfetch'd all the time, but it seems just like in the real world, there are controversies over eating sharpedo:

Pokemon seem pretty comfortable with the idea of serving humans. Pokemon needs human energy, guideance and bonds to become physically stronger, that's pretty much the point of why they agree to follow after being defeated in battle and collecting medals, and how mega evolution came to be, so in exchange they are willing to stay loyal. This seems to extend to even being used as food according to Sinnoh myths, as long as humans don't hurt pokemon and they throw the bones back into the sea.
I would probably eat anything that it's given to me, because I don't like rejecting food.
