Since there is an absolute limit to how high any pokemon's stats can go in one direction, there's no visible difference between a bred pokemon and an injected one. An adamant Machamp with full EVs in attack at level 100 will always cap off at a maximum of 394 assuming it has 31 attack IVs, no matter if it was bred or injected. Its physical attack can never, EVER go over that absolute limit of 394 legally. So as long as it stays at that limit, who cares if its bred or injected?
There's no REAL inherent advantage to the player who injected that Machamp with 252 attack EVs vs the player who grinded those 252 attack EVs since its always going to be the same grand total at the end assuming they are both using an adamant nature with 31 attack IVs.
Besides, why should I try and fight the RNG for eggs and shit when I can just "skip to the end" with injecting? Much less of a hassle and I get the same result I would've gotten by both getting lucky with the IVs and I get to make quick on the fly adjustments whenever I want, like changing my Gengar's nature from modest to timid for a minor speed buff and giving my Blastoise water spout without having to chain breed.
