What could replace PP and make the ether/elixir garbage system worthwhile?

I've heard suggestions like Endurance/Stamina/MP but nobody actually gives a good explanation for how it would work and why it would be more interesting/better.

You get a stamina bar , size varies depending on the Pokémon.

Stronger atacks use more stamina.

Absolutely nothing. Stamina is only an artificial skill increase, running out of PP has never been a problem and the best solution would be to just remove it followed by keeping it in 'cause it's so useless anyway.

There's no need to fix what's not broken.
Stamina would only make the game shit and getting rid of PP altogether is an useless move that can only arm the game because you'll be stuck stall loops.

Hey, while we're at it, lets replace the HP system! I mean, who's got time to be carrying around all those Potions and Full Restores? Having to keep Revives in stock is a pain in the ass too...

but the HP system isn't bloat, it's actually a very good system in my opinion, most RPGs which use wounds/body part damage suffer from spiral of death issues

By not being pussies who run to the pokemon center after every battle. If you have a decently powerful move (Psychic only has 10PP for example), you'll run out after a handful of trainer battles, which means as long as you aren't an item-using, backtracking, level-grinding wuss, PP is a possible limitation to your progress through a route or dungeon.

but there is no part in the game (maybe only the E4) where you are far away enough from the next town/place of interest and can't heal your team.
You don't have to backtrack or use items at all, unless you're griding

But you're supposed to fucking heal or use items in an RPG, do you have downs? How are you incapable of understanding the concept of healing health/MP/PP with the use of consumables or resting at a certain location that has been around since, clearly, before you were born?
